Ingredients
- 2 pounds Ground Beef (85/15 Lean)
- 1 cup Plain Breadcrumbs
- 1 large Egg, Beaten
- ½ cup Milk
- 1 medium Onion, Finely Diced
- 2 cloves Garlic, Minced
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Worcestershire Sauce
- 1 cup Shredded Cheddar Cheese
- ½ cup Roasted Red Peppers, Chopped
- ¼ cup Fresh Parsley, Chopped
- ½ cup Ketchup
- 2 tablespoons Brown Sugar
- 1 tablespoon Apple Cider Vinegar
Instructions
- In a large bowl, combine ground beef, breadcrumbs, beaten egg, milk, diced onion, minced garlic, salt, pepper, and Worcestershire sauce.
- Mix gently until just combined, avoiding overmixing.
- Fold in shredded cheddar cheese, chopped roasted red peppers, and fresh parsley.
- Shape mixture into a loaf and place in a greased 9x5-inch loaf pan.
- OVEN METHOD: Preheat oven to 350°F (177°C). Bake for 45 minutes.
- GRILL METHOD: Preheat grill to medium heat (350°F). Place loaf pan on grill grates, close lid, and cook for 45 minutes.
- While meatloaf cooks, prepare sauce by whisking together ketchup, brown sugar, and apple cider vinegar.
- After 45 minutes, brush sauce over top of meatloaf.
- Continue cooking for 15 more minutes until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
