For the Easy Peanut Butter Sauce
Take care to not let the garlic brown, as a burnt flavor will surely be a curse upon this precious bounty. Cook it just until fragrant and tender.
Ingredients
- 2 tablespoons peanut oil
- 2 cloves garlic, minced
- 14 ounces coconut milk (1 can)
- 1 cup creamy peanut butter
- 1 ½ tablespoons reduced-sodium soy sauce
- 3 tablespoons packed light brown sugar
- 1 to taste salt
- 1 to taste pepper
Instructions
- In a small pot or saucepan, heat the peanut oil over medium heat.
- Add the minced garlic and cook, stirring often, for 1 minute or until the garlic is fragrant and tender.
- Stir in the coconut milk, creamy peanut butter, soy sauce, and brown sugar.
- Continue to cook, stirring constantly, until the peanut butter is completely melted and the sauce is smooth and creamy.
- Season with salt and black pepper to taste.
