  • 8 eggs eggs
  • ½ cup diced provolone or mozzarella cheese (2 oz)
  • ½ cup frozen corn
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh parsley

  • ¼ teaspoon pepper
  • ½ cup diced cooked ham (2 oz)
  • 1 tablespoon butter or margarine

Instructions

  1. In a medium bowl, beat eggs, cheese, corn, chives, parsley, salt, and pepper with a fork or whisk until well mixed.
  2. Stir in diced ham.
  3. In a 10-inch nonstick skillet, melt butter over medium-low heat.
  4. Pour egg mixture into skillet and cover.
  5. Cook for 14–17 minutes, until eggs are set in the center and the bottom is lightly browned.
  6. Carefully invert frittata onto a serving plate.
