For the Savory Ham & Corn Frittata

Ingredients
- 8 eggs eggs
- ½ cup diced provolone or mozzarella cheese (2 oz)
- ½ cup frozen corn
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh parsley
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup diced cooked ham (2 oz)
- 1 tablespoon butter or margarine
Instructions
- In a medium bowl, beat eggs, cheese, corn, chives, parsley, salt, and pepper with a fork or whisk until well mixed.
- Stir in diced ham.
- In a 10-inch nonstick skillet, melt butter over medium-low heat.
- Pour egg mixture into skillet and cover.
- Cook for 14–17 minutes, until eggs are set in the center and the bottom is lightly browned.
- Carefully invert frittata onto a serving plate.
