Ingredients

  • 1 ½ cups chopped apricots
  • cup apricot preserves
  • 1 tablespoon hoisin sauce
  • 1 tablespoon reduced sodium soy sauce
  • 3 pieces pork chops (6 oz each)
  • 2 teaspoons olive oil
  • 1 to taste salt
  • 1 to taste pepper

Instructions

  1. Brine pork chops in lightly salted water for 30 minutes, then pat dry.
  2. In a bowl, combine chopped apricots, apricot preserves, hoisin sauce, and soy sauce. Stir until well blended—this be your golden glaze.
  3. Season pork chops with salt and pepper.
  4. Heat olive oil in a skillet over medium-high heat. Lightly brown pork chops on both sides, about 2–3 minutes per side.
  5. Pour in the apricot mixture. Bring to a simmer, then cover and reduce heat to low. Simmer for 10 minutes, or until pork reaches 145°F and sauce thickens slightly.
